Founded in 2006, by Ted and Dimitri Mastrogeiannis, CAVA started off as a small mediterranean restaurant located in Rockville, Maryland inspired by the founders’ Greek heritage. The success of the food chain lies in the combination of an accessible and simple dining experience. The high-quality and fresh ingredients bring recognition, marking them as a standout among competitors. With a diverse array of vegetables, meats, and spreads, this is the spot for every food-lover. Designed as an assembly line, you can pick and choose exactly what you desire in your bowl or pita.
As a newcomer, there are a few fan favorites that make CAVA worth the visit.
- Harissa Avocado Bowl
This bowl contains a plethora of colorful and vibrant ingredients that give you a dose of spiciness and flavor. It starts off with a base of Basmati rice and super-greens for balance. Followed by Harissa honey chicken, creamy hummus, fire-roasted corn, fresh avocado, pickled onions, sliced Persian cucumber, feta, and jalapeno. To top it all off, you can add extra spice with the hot harissa vinaigrette drizzled on top.

As a person with many food allergies, CAVA allows me to choose what is safe for me. I love being able to make a bowl that I will enjoy with the ingredients and toppings I love to eat. Every time I go, either for lunch or dinner, I always make sure to try a new topping each time to branch out of my food bubble. There are so many combinations and mix ins, the list is endless.
